Sunday Gravy, served with pasta is an Italian sunday dinner extravaganza. Peeps over here call it spaghetti which doesn't even come close to describing this particular nirvana.

I do use meat dripping in my "sauce". I fry my paste inmeat drippings and deglaze with wine.  That's why it's called gravy.

This is a major bone of contention among myself, my brother and my sisters. The older of the girls calls it sauce, but that's because she doesn't understand the whole meat drippings qualifies is as a gravy. Also she doesn't fry her paste so basically she makes marinara and chucks in some meat.  That IS NOT what my grandfather brought over from the old world.
